I quite like the smell when there young but fruit bodies hang around for quite a while so imagine they do turn rank lol

I find it has a herby smell but as you say old ones esp. when maggoty tend to have an ammoniacal odour.
The caps are slippery when wet but not slimy. Colour changes when lightly frosted without affecting texture but heavy frosting will desroy the emerged caps.
