opened tin that had contained dried fungi, tin had not been opened for at least 6 months, full of thousands of minute creatures. all less than half mm

Psocoptera

These look like they might be in the order Psocoptera, known variously as barkflies or booklice. I don't know the group well enough to be sure of it, but it appears that Liposcelis bostrychophila is a likely candidate:
