Illustrations in field guides show a white flower, but I believe it can also be pink.

You have it correct. The flower-heads are very frequently and attractively pink. Many heads also have a darker spot formed by a group of florets. It is thought by some that this attracts flies to the heads to increase pollination, but experiments on this have not been consistent in their results.
